No Gas...

Yeah, no need to rub your eyes or adjust your glasses.

This is such a common sight here in the Southeast right now, it is really mind boggling.

Gas was a bit spotty, meaning some stations would have it and others not.

Today however there was little to no gas to be found.

Kiddos had the day off so we went out to get some supplies for a school project for Spencer. (Dh took the day as a vacation day.) We took dh’s car because his car needed gas; off we went on the great hunt. We went by 10 stations in the next MAJOR city and nothing, so we headed back towards home and stopped at one station not too far from the house the line was so long. As we sat there, the workers came out and covered a few handles. Alrighty.. since we were so far back and things were not looking too good we left. The station right by the house had gas this AM but we really wanted to find some cheaper and you guessed it, they were out by time we got back home.


The car was on fumes (no joke) when we pulled into the driveway. Time to take the mom mobile out to find some gas, and we were in luck! We found one station in town that has gas!! We waited a few minutes and it was our turn.

Dh put some in my car and filled up our five gallon little red gas can. Headed back home and put that into his car, it barely gave him an eighth of a tank. So…the two of us went back out and sure enough they are out! Drove around town all 20 stations are empty!

Reports on the news keep saying it will get better (this has been a week now), I’ll believe it when I see it.

The pipeline that runs from Tx. up this way was shut down for Ike and has only been recently opened up. It is going to take time to get the gas back into production and pumped out.

*sigh*

I know eventually we will have gas in the stations but it really is frustrating.

We shall see if dh can find some to get to work tomorrow otherwise he will be working from home.

Apple Muffins - Recipe

I decided to bake some apple muffins today.

My mom used to make bread with this recipe every fall, enough to enjoy until the spring (freezing the extra loaves, of course).

This recipe is super easy and has perfect results every single time.

Enjoy!

Hint...They are great slightly toasted with a tiny pat of butter.

Fresh Apple Muffins

Recipe By: Mom

Amount Measure Ingredient -- Preparation Method

3 cups all-purpose flour
1 teaspoon salt
1 teaspoon baking soda
1 1/2 cups Canola oil
2 cups sugar
3 eggs
1 teaspoon vanilla
2 cups apples -- finely chopped

  • Grease muffin tins.
  • Heat oven to 350 degrees.
  • Stir together flour, baking soad and salt.
  • In a large bowl beat together oil, sugar, eggs and vanilla until combined.
  • Gradually add in the flour mixture until smooth.
  • Fold in apples and spoon in prepared muffin tins.
  • Bake until toothpick inserted in the center comes out clean.
  • They should bake for about an hour.

Yield:

Crumbly Apple Pie - Recipe

Crumbly Apple Pie

Recipe By: magazine

Amount Measure Ingredient -- Preparation Method
-------- ------------ --------------------------------
Crust:
1 cup all-purpose flour
1/2 teaspoon salt
1/3 cup shortening -- chilled solid
1/4 cup ice water

Filling:
7 medium apples -- granny smith are good -Peeled, Cored & Thinly Sliced
1/2 cup sugar
1 teaspoon cinnamon
1/4 teaspoon nutmg
1/4 teaspoon salt

Topping:
3/4 cup brown sugar
3/4 cup all-purpose flour
1/2 teaspoon nutmeg
1/3 cup butter -- chilled and cut into small cubes

Place oven rack in lowest position. Preheat oven to 400 degrees.


To Make Crust:
  • In a medium bowl, mix together flour and salt.
  • Using a pastry blender, cut shortening into flour mixture until coarse crumbs form.
  • Add water, 1 Tbs. at a time, tossing with a fork, until a dough forms.
  • Shape into a disk, wrap in plastic wrap and chill for 30 minutes.
  • On a floured surface, using a floured rolling pin, roll dough into a 12-inch circle.
  • Fit into a 9-inch pie pan. Trim excess dough, leaving a 1-inch overhang; make a decorative edge.

Filling:

Mix together all ingredients and spoon into crust.



Topping:
  • In a small bowl mix together brown sugar, flour and nutmeg.
  • Using a pastry blender or 2 knives, cut butter into brown sugar mixture until coarse crumbs form.
  • Sprinkle apples evenly with topping.
  • Bake pie until topping is lightly browned and filling is bubbly, about 35 minutes. If pie is overbrowning, cover loosely with aluminum foil.

Happy Birthday to Me....

Yup, today is my birthday.

Today I have hit the big 4-0.

Now, I have not had a meltdown (I don’t think I will) and I can be honest with my real age.

To me I have always felt that you are as old as you feel and honestly I do not feel my age. I feel perhaps in my early thirties tops, expect on those days that I snap a muscle or two. Lol..

Dh left me a touching handmade card this morning wishing me a wonderful day and other touching words. *sniffle*

Last night Spencer said he hopes his team wins their soccer game today for me. Aww..

I am going to enjoy my day and my family which is just how I want to spend it.

Jelly Fruit Slices Candy - Review


I love jelly fruit slices and they are such a treat for me when I do eat them.

These yummy fruit slices were sent to me from Oh! Nuts and let me tell you they are out of this world.

They are some of the best fruit slices I have ever had.

The slices were bursting with fruit flavor that reminded me of the real thing (fruit that is).

My favorite slices were the orange but honestly all of the slices were wonderful.

What flavors did I have to try?

Groan....

I have a bazillion things to get done.. like birthday presents for Spencer (his b-day is next Thursday), dog food (they are all out), groceries (they would be nice), vacuum bags (carpets could use a quick push across), decorations for Spencer’s cupcakes.

I think you get the idea, right?!

So, I get up this morning fully expecting to hit the treadmill and get my walk in (making good progress with my daily workouts) but..instead I was greeted with nausea and really bad stomach pain.

No, no, no…I can’t be sick, I really can’t be.

This landed me out in the family room on the couch for a bit watching the morning news.

Eventually I had to get up and toss together two lunches, and get the kiddos off to school.

I promptly arrived back home and crashed back on the couch for majority of the morning, not a care in the world.

When I did finally feel up to doing something, I wandered over to Etsy and checked out some items and ended up with a purchase.

I have not treated myself to anything in a bit of time, so I thought today would be a good time since I was under the weather and tomorrow is my birthday.

Now I will be on the look out for my purchase in the mail next week.

So tired....

Today was one of those crazy days that occur every so often.

This is how my day panned out:

Up early.

Packed three lunches.

Breakfasts made for kiddos.

Put dishes away from dishwasher.

Washed a load of laundry.

Dropped kiddos off at school.

Home to hang up clothes outside.

Grabbed coupons and headed back out.

Dropped off 2 prescriptions for dh.

Zipped to grocery store (had only 30 minutes).

Went off to find some gas before next item (scare here now).

Off for a cut and color (love the new color).

Back home to unload groceries (they were in a cooler).

Leave dogs out & back in the house.

Heat up Lean Pocket, grab an apple and out again.

Wait in lines for both kids (roughly 1.5 hrs of wait time).

Pick up Meds (sort of, need to call insurance about one)

Back home to help Spencer with homework. (this kid always has a bunch)

Washed and dried another load of laundry (have yet to fold).

Outside to kick balls at Spencer.

Feed dogs.

Take down laundry & put away.

Talked to dh on his way home and decided to have pizza for dinner (Cooking was not on my list.)

Ordered pizza & salad then off to pick up.

Eat - then place dirty dishes into dish washer.

Answered many questions from Nate all through the night (mental drain).

Watched Ghost Hunters, sifted through emails and now I can say....

Time to call it a day!

Then again... tomorrow does not look much better.

A Great Weight Loss Site

Sunday I had some time to myself (srsly, can you believe that?!) before we headed out to go swimming.

So what did I do with my time?!

I surfed around various blogs and visited websites that I had not been too in quite some time.

While visiting one blog (I thought I bookmarked it but apparently I did not) I noticed a button to a weight loss website, and I clicked on it.

Once on the site I was instantly curious on how it looked, worked and what I could learn by using it. What I found completely impressed me

You can log in all your food and exercise for each day. You have the ability to look at graphs of your progress not to mention an over view of each days intake of food. You’ll be able to see may calories you are eating, how much fat, carbs, and protein you have taken in.

It is super easy to get started, simply add in your height, weight and what you would like to weigh. Then you are given your total numbers that you should be aiming for daily. Oh! the site is super easy to use, and you can add in food if it is not listed. Plus, it keeps a list of the foods you have eaten for that particular time of day that you can simply check off if you eat it a different day. Talk about saving time and making it painless!

The site is totally FREE! I was looking into purchasing some software but now I am totally sold on this website.

I wanted to see how much I was eating so I could make some changes in my eating habits and yes, my exercising. You all know how much I just love to exercise. I will admit that I am really trying to work on that exercise part, some weeks are better than others. Tiny steps right?!

I then went digging a bit more and found this great silicone pumpkin mold, it is a bit more but silicone is a dream to work with. This mold bakes the batter into a whole cake, not two pieces that need to be put together.

Salsa Chicken Crock Pot Dinner - Recipe

I am on this healthy dinner kick again and trying all sorts of new recipes.

This recipe I stumbled across on Sunday night on myfitnesspal.com and it was one I just had to try.

I will admit that I did slightly tweak it so that it would be an all in one meal.

Not everyone in our house likes sour cream (are they nuts?!), so I just added it to my plate.

Shh... I may have added just a bit extra of the low fat sour cream.

Dinner last night was a huge hit!

Salsa Chicken


Serving Size : 6 Preparation Time :0:00

4 chicken breast, no skin, no bone, R-T-C
1 cup salsa
1 package taco seasoning mix -- reduced sodium
1 can Cream of chicken 98% Fat Free Condensed Soup
1 1/2 cups instant rice
1 cup water
1 can fat free refried beans
1/2 cup fat free sour cream

  • Add chicken to slow cooker.
  • Sprinkle taco seasoning over chicken.
  • Pour salsa and soup over chicken.
  • Add in refried beans and water.
  • Cook on low for 6 to 8 hours.
  • Add in instant rice. ** You may need to add in a bit more water.
  • Remove from heat and stir in sour cream.

Hey Goalie!!

Saturday morning was soccer time.
Spencer decided that he would step up to the plate and become the goalie for his team.
His coach asked earlier in the week who wanted to be goalie, only two raised their hands and only one was selected. Spence has always wanted to play the goalie position, now is his chance.
He was so nervous on Friday night, his stomach was killing him.
Poor kid.
It would be a tough game for him to say the least. In the first two minutes of the game, the other team scored and he ripped open his knee diving for the ball. He hopped back up and was ready position. Down came the team, his defense was nowhere to be found and yep, they scored again on him. :-(
The game went on and he let two more past him.
After the last one zipped into the upper corner of the net he begged his coach to be taken out. Thank goodness they have one other player who will pitch in for that position.
Overall, he did a wonderful job.
The other team had about thirteen shots on goal and to let only four go by was really good.
The other coach came over told him that he did a great job and to be proud of himself, which I thought was really nice.

He left the game with a very heavy heart because he felt he left his team down but he was so ready for practice tonight.

Fingers are crossed that this week will be a bit better for him.

Then again, it sort of has to be because my birthday is Saturday. *smile*




Tater Tot Casserole - Recipe

The first time I made this I encountered some resistance from dh and the boys because it was a healthy recipe I found while on Weight Watchers. *rolls eyes*
This recipe has since become a favorite and is requested quite frequently.

It is very easy to make and oh my! so tasty.
There are always plenty of leftovers that you can freeze for a later date or enjoy for lunch.

Tater Tot Casserole


Serving Size : 12
Categories : Main Meal

Amount Measure Ingredient -- Preparation Method

1 pound lean ground beef -- 92% or above
1 onion -- small - chopped
1 can Cream of Mushroom 98% Fat Free Condensed Soup
1 Cream of Chicken 98% Fat Free Condensed Soup
72 tater tots
1 cup shredded lowfat cheddar cheese
1/2 cup skim milk

  • Heat oven 350.
  • Spray 9x13 dish.
  • Place tater tots on bottom of dish.
  • Brown beef and onion in large skillet (drain off excess liquid), mix in soups and milk.
  • Mix well.
  • Spread mixture on top of tater tots.
  • Sprinkle cheese on top.
  • Bake 40 minutes.

Yield:
"12 servings"

What was I thinking?!

Apparently, I was not thinking today.

You see we decided to go swimming and before heading into the dh’s office.

Yeah, he sometimes has to work on Sundays rebooting servers. Boo!

I hustled the boys around gathering their clothes (we changed before heading to the pool because it saves a wee bit of time), making sure all gym bags were packed, and that we had something to do while at dh’s office.

Woo-hoo!
We were done in record time and off for a nice afternoon swim in a heated indoor pool.
Ahhh!
(The pool was actually a bit on the cool side.)

Dh pulled in the parking lot, I grabbed my bag and to my horror I do not see my clothes.

I start to frantically dig through my bag looking for them, they had to be there but they were not. How in the world could I have forgotten my clothes?!

Flash back – I pulled out my clothes to pack. I had forgotten to put my t-shirt on over my suit, it is always something. I placed my clothes down on the bed, pulled on my t-shirt, grabbed my library book (needed that to read) and went into the kitchen. Then we all stated we were ready to go and I never went back for my clothes. *sigh*

Yes, I did end up going swimming.
I kept my swimming top on with my t-shirt over it and borrowed dh’s shorts.
What a sweetie.

He treated me to a nice large hot cup of cocoa to warm me up since the office still has on the air conditioning. Brr!

My poor old noggin needs a break.

Assorted Fruit Filled Candy – Review


This was a wonderful assortment of candy sent to me from Oh! Nuts to try.

The colorful wrappers were the first to catch my attention.

The flavors in the bag were cherry, orange, pineapple, lemon and strawberry.

My first choice was strawberry, since I simply adore them.

I mean really who can resist a strawberry?!

The candy has a nice hard shell that is packed with a pleasant real strawberry flavor.

When you reach the inside the fruit just adds to the flavor of the candy, it is not overly sweet at all.

There is not one bad flavor in the whole bag! These candies were wonderful, and I have to say I have not been sharing many of them. *blush*

Midnight run for Brisinger....


Midnight was the release of the third book in the Eragon series – Brisinger

Nate has been counting the months, weeks and hours until today arrived.

I figured we would just go to a bookstore and pick it up for him.
We stopped by the library last week and he found a notice that the local bookstore was going to have a release party from 11-12 on 9/19.

Guess who just had to go.

We did the release parties for book six and seven in the Harry Potter series. There was no way that he was going to miss this event, he would not let us forget the time, date or store.

Dh was the elected party to take him downtown and enjoy the festivities.
Apparently, there were quite a few in costume, great door prizes, fun goodie bags and free snacks.
Nate was thrilled because they had free donuts. (It’s the little things.)

He was able to get his book and he even won a 2009 calendar door prize.

The book has not been put down for any length of time today, I have a feeling he will finish it tonight when he reads in bed.

Notice he is even reading at his brother's soccer game today.

It is always great to see them read!


Homemade Egg Noodles – Recipe

Earlier in the week I roasted a chicken for dinner.

Feeling a bit creative I decided to make some homemade chicken noodle soup.

Growing up my mom always, always, always made homemade egg noodles for her soups.

I was up to the challenge in attempting to make my own noodles.
I have only made then once before and they were um.. not like I remembered them.

Patience cutting items is not always one of my strong points so some of the noodles are a bit bigger than others. I am fine with that and they still taste really good.
My mom however would always cut them so fine and uniform.

This batch was a complete success!

Simply add to soup and heat up!


Egg Noodles Recipe:

from Mom's recipes

Sift together into a bowl:

  • 1 cup sifter flour
  • ½ tsp. salt

Make a well in the center of the bowl of flour and add:

  • 1 egg, slightly beaten
  • 1 to 2 tbsp. water or milk

Dough should be stiff. Turn dough out onto a lightly floured surface. Shape into a ball and knead. Cover and let stand 5 minutes. Roll dough on lightly floured surface 1/8 inch thick. IF dough sticks, loosen from surface with knife or spatula; sprinkle flour underneath. Turn dough over and roll until paper thin. Allow dough to partially dry (about 1 hour). Cut dough into lengthwise strips, 2 ½ inches wide and stack on top of each other. Slice into short strips 1/16 to 1/8 inch wide. Separate noodles and allow to dry thoroughly. Noodles can be stored in a tightly covered container. About 1/3lb noodles.

When drying noodles, I placed them on a kitchen towel and covered with another towel. This is something that I recall my mom doing so it just seemed natural to me to also use this method.


Good News!!

I had wonderful news on Thursday.

The news did take a tiny bit of exercise before I was able to obtain it.

How can that be?

Well…

I left house on time (9am), drove along quite calm and relaxed through all the traffic.

Forty five minutes later I arrive, now I went to the wrong portion of the hospital complex, no big deal just back track over to the other side of town to where it was.

Drive by the other H-U-G- E complex as I was looking for the street numbers. There were no numbers on any of the buildings.
Argh!

Thank goodness the street sign caught my attention because on it I noticed -400 block.

I had to turn around and figure out what building was the magical building.

Drive around once, twice and finally on the third time I decided to stop in the Women's Center.

There should be an information booth inside to tell me where to go.

Now it is 10 am.. it will be alright, I have 30 minutes right!?

Go into the parking garage across the street, up the first level, second level, third level – oh! there is spot on the other side of this gate. The sign for the gate states that it is for patrons from 5am to 9pm and to precede to for the gate to lift.

Sweet.

Pull up, gate does not go up.

Humm..

Pull up a bit more, crud, it will not go up.

Look in my rear view mirror and now I have a tiny little line that formed behind me.

Get out of the mom mobile and tell the elderly woman that she needs to back up because the gate will not rise.

She grumbled something at me, the lady behind her moved out and finally she moved.

Hop back in car, zip up two more levels and found one parking spot.

Now it is 10:05
hustle my rump down three flights of stairs, across the foot bridge, down two more flights, fast walk across this walkway area and finally entered into the lobby. *deep breath*

Spotted the information sign and made a bee line to the desk.

Smiled sweetly and inquired where and how to get to xyz office.

The lovely lady behind the counter flashed me a smile, reached for a map and said, “Oh honey; you really are lost aren’t you.”

Great.. just great..

She explained where I needed to go and I asked her if I had enough time since it was now 10:15. Oh yes, you will have time to spare.

Right, sure I will....

There I go back out the way I came, this time zipping around some women walking outside in labor, up the five flights of stairs, hopping into the mom mobile and *shh* speed raced down the parking garage levels.

Find the office without a hitch (thanks to the directions), race into a parking spot, throw the mom mobile into park and fast walk to the building.

Heart is racing, now I am really sweating (it’s like 77 outside) and a tiny bit out of breath when enter the Dr’s office at 10:40!

Yeesh, I was so flustered when I went to sign in it was not funny.

I asked the receptionist if I should reschedule because I was late.
She looked at the clock, chuckled, smiled and said, “You are more than fine.”

Oh thank you!!

The news… .

There is no need to have surgery right away. *phew*

My Dr. said yes, there is an issue but why tinker with it if it is not totally boken.

We are going to take the wait and see stance, which is fine with me.

I may need surgery one day in the future and I may not, so we shall keep a close eye on the situation.

I can’t tell you how much of a relief that was to me.

My new Dr. is wonderful. He really took his time to listen to my concerns and address some items I had not thought about.

You can say I am one happy camper right now.


>I will spare you the details of me semi watching surgery from the consultation room. You see the room looked right down into an operating room in the emergency trauma center. *eek!*<




Time off…


Sorry that I just seemed to go *poof* over the last two days.

Thursday I was emotionally exhausted and was just going full tilt until 8:30pm.

Friday, I was bubbling with an extraordinary amount of energy (don’t know where it came from) so I decided to focus on catching up on laundry, steaming a portion of the house and getting items inside cleaned up. Then off to help Spencer practice his goalie position and called it a night early.

Just kinda needed a day or two to myself to let everything all sink in and now I am back.

A bundle of nerves...

Today is the day before I head to the Dr’s for my second opinion and I am a bundle of nerves. *ugh*

I have gone from being totally stressed/tense to having a bundle of nervous energy.

Honestly, I don’t think my cup of coffee helped the situation either. (nope, not always a morning coffee drinker)

I started yesterday with making a roasted chicken dinner (comfort food), whipping that up into some homemade chicken soup and on a cleaning roll.

I have been catching up with surveys that I have had waiting for a few days but that is not taking the edge off.

Eep!

Looks like I will go rustle around in the kitchen and see what I can get into.

Thinking some biscotti (need some for breakfast), homemade noodles for the soup and perhaps dinner.

Dinner but it is so early you say.

Well, I have to take Spencer shopping for some goalie gloves after school which means we will be getting home right around dinner time. This way it would be done and we can go on with our night.

Right… tunes turned on to keep me going, will hit the treadmill and get come cooking done!

Watermelon Slices - Review

A few weeks back I received an email asking if review a few items, which totally took me by surprise. I graciously accepted the offer and over the next few days I will be sharing my reviews of candy from Oh! Nuts.

First Up: Watermelon Slices

These little watermelon gems were the first to catch my eye and interest to try them.

They were lightly coated in sugar and they absolutely reminded me of a yummy watermelon slice, not to mention the wonderful watermelon sent from the package. *drool*

The slices had a nice firmness to them and I could tell they were quite fresh.

Why do I say that?
If fruit slices sit around too long the rind area starts to become really hard and I have never been a fan of that.


The candies were not excessively sweet even with the added sugar coating nor were they overly strong on the watermelon taste. I had to eat two before I really tasted the watermelon flavoring. The candies came in a great container that kept them nice and fresh.

I did enjoy the watermelon slices and would not hesitate to share them with others. A nice little sweet treat to satisfy your sweet tooth.

A pain in the neck....

No, no I have not been a pain in the neck (well, I don’t think I have been) but I have a massive pain in my neck.

I have to say that for the past 24 hrs my best friend has been a warm hot water bottle. *wub*

To be honest with you I am not sure what exactly I did but it appears that whatever I did I did it quite well.

All was fine, I put some items into the trunk of dh’s car but that was really not hard at all.

The only thing that I know is that the left side of my neck is swollen and quite sore.
It really is a bugger to turn it and it is just a constant throbbing.

Then the city goes and turns off the water on our street because there is a broken pipe a few houses down.
Do they not realize that this mom is hurting, needs water and wants her hot water bottle?!

Sure hope that we do get our water back on soon, it would be nice to have something warm on my neck. *sigh*

For now, I am off to grab another round of Tylenol.
