Chicken Saltimbocca - Crockpot Recipe

New Year and new recipes to try!
I love trying new food ideas on the family; getting stuck in a rut eating the same food is never fun.
This recipe I found while checking out the Taste of Home website and it was one that I simply had to try.
Now, if I had paid a bit more attention to the recipe I would have noticed that it was to be cooked in the crock pot.
As you know, I love crock pot recipes and that was not an issue.
What was the issue?
I waited until 4 pm to get started on the recipe because somewhere in my mind I had it baking in an oven.
*oops*
The recipe is absolutely delish! The kiddos kept raving how good it was, dh enjoyed it and Nateman went back for seconds that hardly ever happens!
I thought the recipe needed a bit of color so I added in the peas.
The chicken would be quite a bit tender when cooked in a crock pot, but the oven did a fine job with this recipe.

Chicken Saltimbocca

4 chicken breast, no skin, no bone,
4 slices ham slice, extra lean -- low fat
4 slices Swiss cheese
1/4 cup all-purpose flour
1/4 cup grated Parmesan cheese
1/2 teaspoon salt
1/4 teaspoon pepper
2 tablespoons canola oil
1 can Cream of Chicken 98% Fat Free Condensed Soup
1/2 cup chicken broth, reduced fat
3/4 cup peas, frozen

  • Flatten chicken to 1/4 in. thickness. Top each piece with a slice of ham and cheese. Roll up tightly; secure with toothpicks. In a shallow bowl, combine the flour, Parmesan cheese, salt and pepper.
  • Roll chicken in flour mixture; refrigerate for 1 hour.
  • In a large skillet brown roll-ups in oil on all sides; transfer to slow cooker. Combine the soup and brother; pour over chicken.
  • Cover and cook on low for 4-5 hours or until a meat thermometer reads 170.
  • Remove the roll-ups and stir the sauce. Discard the toothpicks.

NOTES:

  • I used Boars Head Low Sodium ham for these roll ups.
  • If baking in oven- bake for about 40 minutes.
  • Dry white wine can be used in place of the chicken broth.
