Salsa Chicken Crock Pot Dinner - Recipe

I am on this healthy dinner kick again and trying all sorts of new recipes.

This recipe I stumbled across on Sunday night on myfitnesspal.com and it was one I just had to try.

I will admit that I did slightly tweak it so that it would be an all in one meal.

Not everyone in our house likes sour cream (are they nuts?!), so I just added it to my plate.

Shh... I may have added just a bit extra of the low fat sour cream.

Dinner last night was a huge hit!

Salsa Chicken

Amount Measure Ingredient -- Preparation Method

4 chicken breast, no skin, no bone, R-T-C
1 cup salsa
1 package taco seasoning mix -- reduced sodium
1 can Cream of chicken 98% Fat Free Condensed Soup
1 1/2 cups instant rice
1 cup water
1 can fat free refried beans
1/2 cup fat free sour cream

  • Add chicken to slow cooker.
  • Sprinkle taco seasoning over chicken.
  • Pour salsa and soup over chicken.
  • Add in refried beans and water.
  • Cook on low for 6 to 8 hours.
  • Add in instant rice. ** You may need to add in a bit more water.
  • Remove from heat and stir in sour cream.

Serving Ideas : Nice large side salad

NOTES :

  • You can add in more water once you add in in the rice. The rice will absorb the water and become thick, more water will thin it out some. It is all a peronsal taste.
  • Wonderful meal and so easy.
  • Don't like beans, then omit all together.
  • I used Cr. of Chicken soup because that is what I had in the house, the original recipe called for Cr. of Mushroom.
