Coconut Cream Pie - Recipe


This is my all time favorite pie!
I would make this every summer with my grandmother when I would go visit them and sometimes she would make it just because when we would visit.

You might recall me stating that I did not think anyone saved my grandmother's recipe for coconut cream pie, well I was wrong.
When we went back home to see my dad after his heart surgery, I mentioned to my mom that it was too bad we did not have gram's recipe.
She looked at me and said, " I thought I gave that to you?'
Huh..
What?!
My mind was whizzing with the fact that perhaps all was not lost and I could recreate this wonderful pie.
My mom found the recipe and mentioned that she thought it was the missing recipe I had been wanting.
Before I could have it however, my mom gave me a quiz.
Can you believe that?
I was asked what was in it, I simply stated, " jello, milk, egg and of course coconut."
The recipe was handed over to me!!
Score!
Now, once we arrived back home I promptly set out to find the ingredients (now that I knew exactly of how much I needed) and make myself a coconut cream pie.

I have to say it tasted just as I remembered... excellent!
Dh (who does not like coconut) even tried it and stated that it was really good.
I smiled and said, " I told you my grandmother's coconut pie was the best."
Seriously, it is that good!
Don't say that I did not warn you if you find yourself eating it all by yourself.

Coconut Cream Pie

Amount Measure Ingredient -- Preparation Method

1 package coconut cream pudding mix* -- instant small package works great
1/2 package gelatin powder **
1 1/2 cans evaporated skim milk***
1 large egg
1 graham cracker crumb pie crust
2/3 cup coconut flakes****

  • Mix egg and milk, sprinkle gelatin and mix vigorously.
  • Blend in pudding mix, heat until boiling, stirring constantly, until to pudding stage.
  • Remove from stove, add in your coconut and mix thoroughly.
  • Pour mixture into graham cracker pie crust.
  • Place pie in refrigerator to cool.
  • Let stand about an hour, serve with whipped cream.

NOTES:

* can use vanilla pudding mix but *IMHO* not the same

** just plain gelatin powder

*** in her recipe it states use enough milk to make 3 cups if using a small box of pudding - that was about 1 1/2 cups - if I can remember correctly.

**** You can add less coconut if you would like.
