Last week the boys asked for some salmon but not grilled so it was time to get cracking and find something different.
This recipe makes a very moist and tasty salmon sure to please those in your family.
I used a light mayo to cut down on calories but you might want to use regular. I will admit that I would cut back the mayo to 1/2 a cup the amount required seemed to be a bit too much.

Snowcapped Salmon

1 tablespoon all-purpose flour
24 ounces salmon fillets (4 fillets)
2 large egg white
1 cup mayonnaise, light
1 teaspoon mustard
1/4 cup Parmesan cheese -- grated
- Sprinkle flour over salmon fillets. Place in a greased 11-in. x 7-in. baking dish. In a small bowl, beat egg whites until stiff peaks form. In another bowl, combine the mayonnaise and mustard; fold in egg whites. Spoon over salmon. Sprinkle with cheese.
- Bake, uncovered, at 350° for 25-30 minutes or until fish flakes easily with a fork.
