Baked Turkey Chimichangas


We love Mexican food and I am always on the look out for new recipes to try.

I have to say that you will never know that ground turkey was used, it is that good.

Nate helped himself to two and a half and he hardly ever goes for seconds!

I realized when I typed the recipe into MasterCook that I did not place the salsa over them before I placed them in the oven.

I kept thinking they were a bit dry and needed some sort of sauce overtop.

Silly me!

They were quite yummy and the boys said I could make them again. *grin*

Baked Turkey & Jack Cheese Chimichangas

1/2 pound turkey, ground -- make sure to buy the lean ground turkey
16 ounces fat-free refried beans
8 ounces salsa
4 1/2 ounces green chiles
1 teaspoon chili powder
3 tablespoons scallion -- thinly sliced
1 cup reduced fat Monterey Jack cheese
10 small flour tortillas
1 cup salsa
1/2 cup fat-free sour cream

  • Preheat oven to 350. Coat a 13x9x2 inch baking dish wiht cooking spray.
  • Add turkey to skillet and cook over medium high heat until lightly browned, about 5 minutes. Drain off any excess liquid from pan and then add beans, 8 oz of salsa, chili powder, chili peppers, and scallions. Cook until heated through, about 3 minutes, stir in cheese.
  • Meanwhile, wrap tortillas in foil; warm in oven for 10 minutes.
  • Assemble chimichanges by spooning about 1/2 cup of turkey mixture onto each tortilla; fold in side and roll up.
  • Place chimicahngas into prepared baking dish. Bake uncovered until tortillas are crisp and brown, about 20 minutes.

Serve each topped with 2 tbl salsa and 1 tbl of sour cream.
