Gooey Peach Cobbler - Recipe

I really wanted to make a peach crisp but I was out of oatmeal, and corn starch. Sort of felt like ‘Ol Mother Hubbard. :-/
So, the next best thing was to try a new cobbler recipe and I really enjoyed the flavor of the peaches with the ginger. (not a big ginger fan here) The inside of the top crust was a bit softer than the other cobbler recipe I posted.

I don’t think that this one will disappoint you if it is the one you decide to make.

Peach Cobbler

Amount Measure Ingredient -- Preparation Method

13 peaches
1/4 cup sugar
1 teaspoon fresh lemon juice
2 teaspoons cinnamon
3/4 teaspoon powdered ginger
3/4 teaspoon vanilla

1/2 cup unsalted butter
1 1/4 cups flour
1/2 cup sugar
1/4 cup splenda
2 teaspoons baking powder
1 cup milk, skim

  1. Preheat oven to 350.
  2. Mix all ingredients for filling - first six ingredients.
  3. Set aside - filline will be juicier than most.
  4. Melt butter in a 9x13 baking dish in the oven.
  5. In another bowl, stir together flour, sugar, splenda and baking powder. Then add milk
  6. Mix until lightly blended.
  7. Pour over peaches filling that has been placed in the pan.
  8. Bake 45 minutes.
  9. Serve warm.

* Original recipe called for 1 cup of sugar for the batter portion. I broke it down with sugar and Splenda.
