Blueberry Muffins - Recipe


There is nothing quite like a blueberry muffin in the morning.

Mmm… fresh blueberries

Mmm…. cinnamon & sugar topping

Not to mention they go so well with a hot cup of your favorite coffee or tea and always with a cool glass of milk.

This is a very simple recipe that you will really enjoy.

This muffin is not overly sweet, taste wonderful and they will always turn out perfect. (I have yet to have a bad batch. *knocks on wood*)

Note: I used a short muffin pan and overstuffed the tops with the topping. *smile*

Recipe:

Muffin Ingredients:

  • 1 ½ cup flour
  • ¾ cup sugar
  • ½ tsp. salt
  • 2 tsp. baking soda
  • 1/3 cup vegetable oil
  • 1 egg
  • 1/3 cup milk
  • 1 cup blueberries * (cleaned)
  1. Pre-heat oven to 400 degrees and grease muffin tin.
  2. Combine flour, sugar, salt and baking powder. (I like to use a whisk to mix all ingredients.)
  3. Place vegetable oil in a 1 cup measuring cup; add the egg and enough milk to fill the cup (approx. 1/3 cup). Gently beat ingredients together.
  4. Mix the wet ingredients into the dry ingredients.
  5. Fold in blueberries.
  6. Fill muffin cups to the top and sprinkle with crumb topping.
  7. Bake 20-25 minutes. Let cool and enjoy!

* Hint: Place your blueberries in about 2 tbsp. of flour and gently roll them around until the berries are lightly coated. This will help them from sinking to the bottom of your muffin.

Crumb Topping Ingredients:

  • ½ cup sugar
  • 1/3 cup flour
  • ½ cup butter
  • 1 ½ tsp Cinnamon

Mix all ingredients with a fork (will resemble crumbs) and sprinkle over muffins.
